Cleaned and cooked to eat as a vegetable, frequently welcomed in relish-like salads because of its tangy crunchiness.

Most Mexican groceries as well as some well-stocked general groceries.
CHOOSING:
Vibrantly colored, firm paddles have better taste and texture than dull, limp ones. Smaller ones are more tender and have a less sticky texture than large ones.
STORING:
In the refrigerator, loosely wrapped, for up to two weeks.
